Who doesn’t love breakfast food? Nobody, that’s who! Allow me to introduce you to this amazing low carb crepe recipe that is surprisingly simple.
I adapted my egg fast approved, low carb pancake recipe to create these crepes. It is a quick and easy batter that can be tossed into a blender. I personally use my Magic Bullet blender as it is the perfect size.
Slice a few strawberries and whip up a quick mascarpone mixture to fill the crepes and you’re good to go! It makes a wonderful dish to surprise someone with breakfast in bed or to make your young ones feel extra sophisticated at the breakfast table.
My Momma (yes, it’s capitalized because that’s her name, right??) was my taste tester for this recipe and she absolutely loved it! She was a fan of the airiness of the crepes and the freshness of the strawberries with the slightly sweet filling. If Momma is happy, everyone is happy. Mark this one down as a win!

- 3 eggs
- 2 ounces cream cheese
- 2 TBSP sweetener
- 8 ounces mascarpone
- 1 cup sliced strawberries
- 1/2 tsp vanilla extract
- 1-2 TBSP lemon juice
Feel free to play around with your sweeteners. I like to use monk fruit sweetener in my crepe batter and Swerve powdered sugar in my filling as it dissolves nicely into the mascarpone.
Step by Step Instructions
Step 1
Blend three eggs, two ounces of cream cheese, and one tablespoon of sweetener into a frothy batter. Let it sit for a minute while your nonstick pan heats up to about medium heat. I recommend spraying or letting butter melt between each crepe.
Step 2
Pour a thin layer of the batter into the pan and allow it to cook until you are able to flip it. Cook on the other side. Each side should take about 1-2 minutes depending on your heat level. Do not let them brown much. Set aside to cool slightly.
Step 3
Stir together the mascarpone, lemon juice, vanilla, and one tablespoon of sweetener. Fill the center of the crepe with the mixture and strawberries, then roll it up to serve.
